The symbols change to correspond to the only possible numbers that can be picked... or... something. |

I know this one!!
What happens is that the math trick will always give you a number that is divisible by 9, so all those numbers have the same symbol.
if you picked 10 for example, you would add 1 and 0 which equals 1.
then you take 10 - 1 and get 9 whose symbol would be $ or something like that. |
