One thing I don't get, and am probably just missing, but if there is always a Sith and an apprentice, where is the Sith when it's just Vadar in the original movies? Vadar is not a Sith. Or what exactly is a Sith? Is it just a master of the dark force, or is it an actual race of beings?

wrong-o. They were originally a race of beings, encountered by the banished Dark Jedi 4,000 years before the first Battle of Yavin(1st Death Star). They interbred, and eventually the species and the Dark Jedi tradition became one and the same.
Also, not just "anyone" can be a Sith. There are only ever two Sith, EVER: apprentice and master. This is the "Rule of Two" established by Darh Bane.
