Anyone ever had Irish bacon? It looks kind of like a hybrid of bacon and ham, but doesn't taste much like bacon. It tastes more like pork. It's pretty decent, however.
Or how about Pancetta (aka, Italian bacon)? I'd have to say that aside from actual, American bacon, Pancetta is the next best thing. It tastes pretty much the same...just...Italian. |

Something inside me tells me that there's something wrong with calling something "bacon" (or any other meat, for that matter), if it does not contain any of said meat.
Like, for example, you can't have a "Meatless Meatball", which I've seen before. It's very name is just a contradiction, the likes of which are akin to looking straight at Cthulhu or something. |

Yes, bacon is technically pork, but it has it's own distinct flavor. For example, when you eat a pork chop, it tastes like pork, not bacon. The same thing holds true for ham. While it may be made of pork, it doesn't taste like pork...it tastes like ham. |

Oh and Ming, my friend who's British says british bacon sandwich's are wonderful but I can't find Irish bacon (which is the closest thing to British bacon in the states) to try it. |

The only reason I had it the other day is because UP and I went to a VERY Irish section of Westchester and had a Full Irish Breakfast at an Irish coffee shop. If you don't have such an area handy to you, you could probably find Irish bacon at a specialty supermarket, or something that carries more obscure items that any other run-of-the-mill place.
But reflecting on your post, an English/Irish bacon sandwich seems awfully tasty. |

It is similar to corned beef only you are using center cut porkloin instead of beef brisket. You can most likely find it in a Farmers Market, or make it yourself by immersing the meat in a solution of water, salt, sugar, and spices.
Use a ratio of 1 1/2 - 2 cups of kosher salt to 1 gallon of water, and add spices and suger to taste. Soak the tenderloin over the course of a day, and cook it however you like (smoking or charcoal grilling is ideal).
