Bacon Water Chestnut Bites: A Recipe

You need:
-Slices of Canadian bacon
-Whole water chestnuts, sliced in half
-Leeks cut in ½" pieces
-Pressed ham cut in pieces 1"x½"
-1½ tbl sp. sugar
-¼ cup of bouillon
-1 tbl. sp. honey
-1 tbl. sp. wine
-¼ tea sp. garlic salt
-3 tbl. sp. soy sauce
-Round toothpicks

1) Marinate water chestnuts with soy sauce, honey, sugar, wine, bouillon and garlic salt from 2 to 4 hours. The longer you marinate, the crispier they become, but the easier they split when preparing them.

2) Cut bacon slices to an appropriate size, so that you can place on top a slice of pressed ham, the chestnut, a piece of leek, and then be able to wrap the bacon around it all. Hold it all together with a toothpick (this is why you use pressed ham instead of real ham: to make the stacking easier.)

3) Preheat oven to 375 F and cook from 15 to 18 minutes on a gril over a receptacle so the bacon fat can drip away. Lay the chestnuts on their side and flip them around halfway through cooking.

4) Serve hot!

Excellent apetizer, especially during the holidays. Can be eaten just like that or accompanied with a sweet & sour dip. Can be prepared in advance, frozen and re-heated easily.
