Here's mine:

PS2: Kingdom Hearts. Hands down.
GC: Windwaker. GC lacks in RPG's.
XB: Halo. I simply haven't played anything else, though KotoR looks good.

PS2: I haven't really gotten into a lot of PS2 games, though I did melt for Kingdom Hearts so I'll go for that.

GC: SSBM. This game has saved my bored ass on many occassions. Hell, I've even whipped it out with a bunch of girls that have never played with it before, and we all had a blast. (for all you perverts out there, I meant that I whipped out the game...not that I thought about it at all)

Xbox: Same thing as SSBM but for Halo. I also don't own an Xbox, so I'm not too informed about the games.

PS2: Too many..Can't choose
GC: Twin Snakes is the only thing that really comes to mind as I can play it over and over again even though I played through the game like 10 times on PSX.
X-Box: Riddick...Best damn FPS out there hands down.

If by "best" you mean the one I wouldn't trade and always enjoy playing...

PS2: Need For Speed Hot Pursuit 2 (a game with no flaws? Amazing. From EA??? Absotively fancredible!)

GCN: Game Boy Player (Hasn't come out of my GC except for Pokemon Colloseum. So I guess PC would be the real choice.)

XBox: Halo (you mean there are other XBox games?)

and how could you forget the best overall console out
GBA: Yugioh Worldwide Edition (until I get Reshef of Destruction)

XBOX: played KOTOR on PC, but i imagene it was good for Xbox too. >_>;;
